1 cup (3 oz./85 g) green beans, trimmed
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
Steam green beans for 10 minutes until tender. Mix vinegar and mustard together into a dressing and toss with the beans. Serve
Grilled Tuna and Eggplant
Prep time: 5 min. / Cook time: 30 min. / Ready in: 35 min.
1 medium eggplant (aubergine)
3 oz. (85 g) fresh tuna steak
1 teaspoon mixed herbs
2 teaspoons lemon juice
Preheat oven to 400°F (200°C/Gas mark 6). Prick the eggplant and bake it for 30 minutes until tender. Meanwhile, season the tuna with herbs and lemon juice and grill, broil, or dry-fry for 5 minutes. Serve with green beans from previous recipe.
